Plum Tart


30ml Juno Gin Extra Fine

15ml Chambord

15ml St Germaine elderflower liqueur

30ml plum juice

Touch of soda

1 black doris plum

1/2 lime or lemon


Muddle plum and ice (to muddle means to press the ingredients against the side of the glass with a muddler).

Add Juno Gin, Chambord, soda, plum juice and St Germaine.

Shake and pour into glass.

Top with crushed meringue.

Garnish with lemon and thyme.
